I have the setup in my sig and have just started to OC it so I finally installed PCProbe so I could keep an eye on the temps and volts, I also installed HWMonitor just as a backup.
Now, every now and then PCProbe will throw up a warning that either the CPU, NB, HT or SB have too high a voltage, any where around 9.13 volts.
HWMonitor however never changes. Is it just PCProbe misreading things and scaring me?

. Never needed to tbh. You can check all of the rails from the ATX-24pin, and the mosfets on the motherboard do the rest. Though, why do you need to? I have no doubt there will be test pads on the board to manually check these voltages, but I do not know the location.
