Voltage Offset. 3900x

Having trouble understanding which option adjusts Voltage offset in bios.

is it Dynamic Vcore (DVID) ?

or Dynamic VCore SOC (DVID) ?

How do the two differ?.

3900x on a Gigabyte X570 Aorus Pro.

SOC is the control portion of the CPU. Its not the chipset (a separate bit of silicon on the motherboard) and it's not the CPU core(s). Its voltage is a little bit like Intel's uncore voltage.

It doesn't have much impact on core overclocking - so long as it's set to a sensible voltage you can leave it while overclocking.
