VPN options (free....)

Going to Thailand next week and the hotel has free wifi. We will be taking our iPad which has netflix, I player etc and might watch the odd show whilst we are there.

What software do people recommend for me hosting a VPN on my Mac Mini (lion)

Looking in the network settings on the iPad, it looks like I can connect to one relatively easily with the built in functionality ?
 
That appears to be a client for connecting into a server. I want to host a server (PPTP or IPSEC) on my Mac Mini for my iPad to connect into and make use of my UK internet connection
 
So.

I decided getting OS X Server through the app store was a far easier option than messing around with weird command line tutorials.

That... hasn't been as straight forward as I would have liked.

Firstly, my 'trusty' VM fibre connection seems to like changing the IP address, which, is useful. Not. Any ideas for some sort of service to alleviate this issue? I'm thinking something like a hostname online that has a connection to a client on my mac that appropriately routes to the relevant IP

Secondly. I can't connect to it. Thats a slightly bigger issue. I've got the VM Superhub in Modem only mode so it just passes all traffic through, and my Time Capsule as my Router is 'shared' into the OS X Server app so I presume that has sorted out any forwarding issues. I get various error messages depending on the VPN type I try to run ... is there something obvious I need to do to enable VPN? either PPTP or this L2TP jobbie?
