How are number of walls and wall thickness related?
If using 2 walls i see it says 0.8mm wall thickness. Is that the thickness of a single wall or the 2 walls combined?

“walls” you can think of as perimeters, some slicers call it this. Calculation would be 0.4(nozzle width) x 2 perimeters = 0.8 overall wall thickness.

Ahh is see. So if i change wall thickness to 1.2mm does that mean it will automatically use 3 walls of 0.4mm size?
Yes, thats right. I generally go for 3-4 walls, with 5 layers top and bottom. Give decent prints with good strength. Also, it can depend on the material (a bit of trial and error needed depending on your printer)
