I'm wondering, what's the easiest way to control my radiator fans by my water temperature? My fans speed up, then slow down, quite quickly whilst playing games and such.

What mainboard you using ?
Asus suite software has a Delay you can adjust than means the fans take a longer period before adjusting speed etc, it helps even out the noise
The more expenstive option and what i have done is use a Aquacomputer Aquaero 6:

Then attach a water probe:

Run fans back to Aquaero, bit of fliddering and sorted
