Weird crashing issue

I've been banging my head against this for weeks and have drawn a blank. Maybe you (yes you *points* can help me).

I recently changed my GPU from a 980ti to a 2070 Super. All is good. Performance is great. However I'm getting complete system restarts but not when I would expect.
Playing games, VR, etc with the GPU running at 100% is fine. It will run like this for hours on end with no issues at all. I'm getting crashes when doing CAD stuff in Solidworks or Fusion360.
Both of those apps are desktop aps with accellerated OpenGL. It's completely random too. If it was doing it when gaming I would point squarely at the GPU but it's not. It's not CPU overheating either as it's on a triple fan AIO and never gets abover 40 degrees even when rendering with all cores at 100%.
It will run OCCT all day.

It's just really weird that this machine has been absolutely rock solid since I buit it right up until the day I changed the GPU.

Nothing is registered in the event log beyond "Unexpected restart"

Nothing is overclocked and the only thing I've changed in the PC is the GPU.
