First step is to kill any programs running in your system tray that you dont want/need. Then go into your registry or use msconfig to get rid of this proggies from startup.
When done, restart and have a look at your processes again. There should be less. Now click on the Username column and this will order all the tasks by username. Anything with your username can be killed safely. If you dont know what something is, look it up on the internet.
If you really want to go to town you can get rid of SOME system processes but its not recommended. Best bet is to disable Windows services. You cant just disable them willy nilly though or you could end up breaking something lol.
http://www.dfi-street.com/forum/showthread.php?t=34836 this vid is very good and shows you all sorts of stuff you can do to make Windows more efficient. While it is best to do this just after a fresh install, its not a requirement and apart from drivers everything else in the vid you can do whenever you like.
