Local butcher had run out of chicken breast fillets, so did a couple off a whole chicken they had on display.

Going to make some form of tomato/basil sauce with Courgettes and Spinach and serve that with the grilled Chicken breasts.

What are you cooking for dinner?

So settled on what i'm cooking, no real recipe - just what's laying around.

Sauteed some Onions and then diced Carrots in Olive oil, added a tin of tomatoes, about half a pint of Boullion and sliced Courgettes. Once the sauce was simmering away chopped up a mild green Chilli, added some Basil and Spinach and a pinch of Celeriac Sauce. Added a glug of Shiraz.

The Chicken breasts are marinating in Olive Oil, some Lemon Juice, Black Pepper and they'll go into a grill pan.
