What CrossFire Can i Do?

I dont know what you mean, the only different types of crossfire I can think of are 2, 3, or 4 cards.

2 cards is obviously the most common, you just buy a second one and add it to the second slot with a crossfire bridge connecting them.
 
You should be fine with x2 5850's in that mobo because it supports x8 / x8 instead of x16 / x4.
 
i swear i read something about symmetrical crossfire or something
now to decide if i should do it with my case - Coolermaster Scout
When connecting a Card to the PSU - does it have to have BOTH connections going into the PSU, the PSU has 2 red connections 6pin (i think) and at the moment i have BOTH cables running from the PSU into the 5850 - if thats correct that means my PSU cant do crossfire as i dont have any red connections left or should i only be using one connection to the 5850 from the PSU?

650W mininum for x2 5850's. you need x4 6 pin connectors.
