And what would you change to bring this spec to under £1000 pounds.

System will primarily be used for media, ie videos and music, video editing and after effects and occasional gaming.

I will also be overclocking, and wish for the computer to be as future upgradeable as possible.

Personally I would go for 4x1GB rather than 2x2GB, it will work out cheaper and will overclock a lot better.

Also Corsair is not the cheapest RAM out there either.
 
The Kandalf is way overpriced. Drop down to a more sensible case. If you're to only be occasionally gaming there's no need for a GTX. A 1950 Pro would do the trick.

You've also neglected a CPU cooler. You'll need one.
EDIT: That's a DDR3-only motherboard. You've included only DDR2 memory.

The GTS there is a placeholder for the 8800 GT which should be out very soon. It'll outperform it but will cost about the same and use less power.

Does the gfx card not have much impact on applications such as after effects and video editing software?

With this cooler and case I'd expect anywhere from 3.2 to 3.6, depending on how willing your CPU is.

It has a little effect but it certainly doesn't require the oomph that a modern game requires since it's all 2D. Check this out: http://www.adobe.com/products/aftereffects/opengl.html

EDIT: Don't mistake me, the 8800 GS will still be the second fastest consumer graphics card money can buy. I'm just trying to save you a few hundred quid.
