Hi guys

We've got the in-laws round tonight and I have some nice small fresh local carrots lined up. I was just going to steam / boil them, but has anyone got any tricks to make them a bit more interesting? Going to be served with roast chicken ballotine.

Thanks for any cracking carrot recipes!

Thanks guys, I went with the honey glazed option.

I firstly trimmed the leaf and peeled the carrots to make them look cheffy, then tossed them in a frying pan with some melted butter with two smashed cloves of garlic, sea salt, and freshly ground black pepper. I then added a teaspoon of caster sugar and a teaspoon of honey, along with roughly 350ml of chicken stock and left them bubbling away for about 15 minutes, by which time (by some fluke) the carrots were 'a point' and all of the liquid had just evaporated, leaving the sticky glaze. They were really good!

No pics I'm afraid, but they looked and tasted great!

Edit - they basically looked like this but a bit shorter and slightly chubbier (not Chantenay though), and with a glaze:
