IM - Adium - This is a great heavily customisable multi IM client.
Email - Mail.app - Good enough as it is to be honest.
Word Processing - NeoOffice (Or Bootcamp to use OO.Org).
Diary - as in dates and such? iCal is brilliant.
Digicam Software - Photoshop - but only as I get a uni license. GIMP for a free alternative.
Web Design - NVU is a Dreamweaver equivlent for Web Development but if you want to get your hands dirty with code TacoHTMLEdit is goooooooooood!

Other than those I have Unison (Newsgroups / Usenet) VLC (Video Playback) AppZapper (brilliant unistaller to get rid of all those linked pesky files) Omnigraffle (Visio for Mac).

How do you rate office 2004 for mac what is outlook like on it? Does it use more memory??

No outlook only Entourage, and its all good lol (toolbars are abit different if you have been used to PC Office), but on a mac pro with 5gig of ram nothing makes it flinch much :/

£500 for meetingmaker I dont think so... Want free diary but meetingmaker looks like what i want as i do put a lot of stuff down

What's wrong with iCal? I use that and it syncs with my Sony Ericsson w800i, got all my lectures, club meetings blah blah blah all marked down and can even set it to alert me 10mins before events and such...

Also, there's sites like
http://www.icalshare.com/

where you can get/subscribe like "All UK Bank Holidays and Events" type of stuff synced with your iCal... very useful.

I find Appzapper a bless from heaven.
I've used it right from the start of my Mac experience, a mate of mine told me words and wonders about it - and it is that useful. Drag the unwanted app and all associated stuff in the library is gone... so far, I've yet had any issue...

I have found NVU NOT being very realible it not opening as it should... Have read on NVU site that it not compatible with Intel macbook it can work but not fully.

When I open it it ok but when i come to open it again it wont unless i quite it and start again.

Anyone else with this problem?
