What is a good temp for a overclocked twin frozr 7950 CPU clocked at 1000 core, 1000 core voltage, memory clock 1500 at the min i am getting about 56c

I disagree from 80+ I would look at seeing if you can get better cooling, at 90+ I would start worrying.

Nonsense, 110 degree's is fine.........oh wait, can anyone smell burning?
7900 series are quite tolerant to heat, agree with Shankly on this. iirc the thermal shut down is something daft like 110c anyhow 
56c is nice and low, you probably have a nice bit of head room to take the volts and clocks a little higher
