Would like to know the fastest GFX I could have (ATI or NVidia) in this machine bearing in mind the CPU (A64 3200+ OC'd to 2.7GHz)?

Basically go with the fastest you can afford
Something in the X1800/X1900 or 7900GT range would be great with that system.
I'd consider getting 2GB of RAM if you're going for a top end card. The 7950GX2 is definitely the fastest out there at the moment, but you could always go one 7900GT or GTX and add another later. Your CPU at 2.7Ghz will be a good partner to any of the top end cards
