What memory do I need to go with this:

I wont be overclocking - what speeds does the CPU/motherboard/ram run at?
The cpu information says:
Memory Controller: Dual channel DDR3 1600/1866/2133/2400/2666+ MHz
The motherboard says:
4 x DDR3 DIMMs 1066/ 1333/ 1600/ 1866(OC)/ 2133(OC)/2400(OC)/ 2666(OC)/ 2800(OC)/ 3000(OC) up to 32GB max
So is that 1600 the default, non-overclocked speed?
Is there any advantage to higher speed memory if the CPU/motherboard is at 1600?
As you can probably tell, I'm not particularly knowledgeable on this
I'd quite like 16GB, so any recommendations on what to buy would be good too.
