What on earth to do with this oversize courgette

Ok, So I went to visit my Mum last week who had been looking after my little girl. Earlier that morning my Step father went to his allotment and picked his courgettes....

I have ended up with this its around 5 inches wide and 40 inchs long lol.

So La Cuisine, what do i do with it lol

Thinly slice and put on a griddle for a coupe of minutes either side. make some saffron infused risotto. take 3 or 4 slices of courgette and place a dollop of risso onto the slices with a piece of mozzarella then roll. poach 2 or 3 of them in the oven with some chicken stock and Parmesan over the top. home made saffron risotto cannelloni

Ok so we have never ever done stuffed anything, but it ended up like this. a little to much cheese but meh that was the mrs.

Sort of a spag bol mix taken from google

It isnt, I am a cheese addict however with high cholesterol its probably not the best thing for me lol.
