As the titlse says, how much of a difference is there in performance between the 2 ?

Around 3-5%.
I used to have the same mobo you have in your signature then went to an X48 model and saw around 5% increase with the same graphics card.
However when ATI enable the sideport feature of the 4870X2 you may see a bigger increase as that will double the interconnect speed.
