Keep it simple.

Had iPhone 5 then iPhone 6 in Australia. Awesome 4G network there, unlimited data on company policy.

Moved to UK. Need a smartphone, will have to use it for work (agency) in the short term. Long term I may get company phone or reimbursement for using my own.

What is the best deal. I can pay cash for the phone then monthly contract or pay higher contract for "free" phone.

I'll still need a fair chunk of data, but mobile coverage probably most important.

I have used an android phone a long time ago (wildfire) which was a bit clunky compared to iPhone. Tethering to use hotspot is something I would probably use a fair bit, outlook on phone also.
 
Check what the coverage is like where you actually need it. There are various online resources available in addition to the operator's own coverage maps.

For example EE would suit me well enough on paper but the coverage at home and at two of the client sites I'm often at is near useless. Also, don't you need to get the iPhone from EE to have their WiFi Calling, or has that changed since the 6S?

Agree best to check coverage where you are going to be mostly using the phone before deciding on which network. For example EE sucks where I work (which is admittedly out in the stick a bit) 1- 2 bars of 3G average on EE and three, where o2 has 2bars of 4G on average or 2 -3 bars of 3G. Hence I switched to o2 so it no longer looks like Im trying to take a selfie every time Im trying to load a webpage!
 
WiFi Calling works on any iPhone 6s on EE. Doesn't matter where it's from.

Interesting. I'd assumed that because my iPhone (purchased direct from Apple) didn't have the menu options required to enable WiFi calling there was something different about the phones they supplied.

If WiFi calling will work on my 6S (and the Wife's 5S) that would give me another option. We're currently with Three and since they enabled 4G the coverage at home has gone from good to barely usable, so I'm looking for a new provider.

The ofcom map shows Vodafone to be the best then o2 and EE.

And yes Telstra in Aus are the best, but expensive.
