On single GPU setup a good 500w PSU like corsair as above will be fine.

Have you not purchased the above yet then? If not then you should go for Ivybridge rather than Sandybridge something like:

(Went for an mATX board as you did with your spec)

YOUR BASKET
1 x Intel Core i5-3570K 3.40GHz (Ivybridge) Socket LGA1155 Processor (77W) - Retail £184.99
1 x ASRock Z77 Pro4-M Intel Z77 (Socket 1155) DDR3 Micro ATX Motherboard £77.99
Total : £273.78 (includes shipping : £9.00).

Although I wouldn't get an mATX board and if not:

YOUR BASKET
1 x Intel Core i5-3570K 3.40GHz (Ivybridge) Socket LGA1155 Processor (77W) - Retail £184.99
1 x Gigabyte Z77-D3H Intel Z77 (Socket 1155) DDR3 Motherboard £84.98
Total : £281.38 (includes shipping : £9.50).

My friend owns a small shop and he has sandybridge cpu's he will sell to me for a really good price :(

Just to let you know my system with a Overclocked i7 2700k and Gigabyte 670 GTX WF card I pull 330w from the mains, this is with the CPU & GPU under load.

quality 500w psu's like a corsair, seasonic etc..... are in a different league compared to a cheap 500, 600 700w psu.
you will be fine, they always state more then neccasary to allow for inferior psu's

And more importantly, the quality PSUs also quote the power output that they can happily deliver continuously. Cheap PSUs can to be labelled with the power output that they can theoretically deliver - for a short period...
