I didn't really play Daggerfall or Arena much.
In Morrowind I found myself always playing a dark elf - it just felt more in keeping with the game itself.
In Oblivion I had a liking for playing Khajit. One thing I always did was install a mod to toggle the Khajit nighteye skill which seemed to make more sense. I loved playing sneaky cats.
