The first thing I did on build 7260:
Windows features on or off.
Turn off Media Features
- Windows DVD Maker
Turn off Print and Document Services
Turn off Remote Differential Compression
Add Telnet Client
Turn off Windows Gadget Platform
So far this is the only things I have removed/added to the windows 7 install.

Too many to remember really as i followed the optimisation guide in windows 7 manager which is free at the moment since its in beta available here http://www.yamicsoft.com/ good program as i used to use it for vista also.
