If you are looking for value for money then wait. The prices will rapidly go down for 5xxx series cards on the release of the 6xxx series. Of course, 'when' they are released exactly is anyone's guess. (November apparently).
If you an afford the 5970, then you will definately be able to afford the top-end single gpu solution that comes out. I do doubt the top end 6xxx single gpu will be as fast though, but will possibly provide a better experience over games that don't tend to like crossfire.
EDIT: The price question. I don't think the price will go down 'dramatically' as 6xxx will likely be in short supply initially, but they will take a price hit. You could have course buy the card you want now then sell it on later. A better bet might be to buy your 5970 second hand then sell it on just before 6xxx is released.
