So once said desk is built, do I first sand, coat of primer, second sand, second coat of primer followed by a varnish?
If so, I'm thinking beech or maybe oak.

Do what I'm doing... go buy a kitchen worktop? Comes in 2/3M lengths already finished for you... and usually 38mm thick and 600mm deep.
I'm getting mine from wickes in a few weeks, should be around £70. They have some nice wood look finishes too, rather than the stereotypical glossy kitchen style finish.
I think I would find 38mm too thick.
