What slow cooked recipe can I make from:

I tried the pulled pork a couple of times which was very tasty, but looking for something new. Will be cooking for 2 people, and have a 3.5l slow cooker.

I make chilli con carne as follows

1 x pack of mince (M&S is much better than the likes of Tesco IMO)
2 x large onions
2 x celery stick
1 x tin of kidney beans
1 x tin of chopped tomatoes
1 x carton of tomato passata (or tin tomato soup at a push)
1 tbsp chilli (add more for more punch)
1 tbsp cumin
1 tbsp garam masala
1 tbsp paprika
1/2pt stock/gravy

Chop the onions quite small, not tiny but not strips. Fry for 5 minutes in oil of choice. At the same time fry the beef, no need for oil. When the onions are softening and going glassy (sorry I am not a cook) add all the spices and stir thoroughly and often until there is no more clumps of powder, should take another 5 minutes, ensure there is no burning/sticking to the pan. In the mean time the beef should be done (just needs browning, as it will be cooked in the sauce for some time). Drain the fat from the beef and decant to a large saucepan. Pour the tomato passata over the onions and stir for a minute, making sure you get the goodness from the pan ;) then add to the beef. At this stage chuck in the kidney beans (rinsed) and chopped tomato, half pint of stock or gravy along with the chopped celery and bring to a simmer stirring. Reduce heat to a very low simmer and cover the pan, stirring every 10 minutes or so and let simmer for as long as you like though at least half an hour.

Serve with tortilla chips, rice, toasted ciabatta or whatever you like. Tis awesome and even better the next day :)
 
The chicken will be fine. Do pulled chicken, therefor you need to spend basically nothing.
It's not just a pork dish, can be done with most meats.

Just get some baps & coleslaw, as well as bacon and pepper.

Make a bbq "baked beans" with the kidney beans, bacon, pepper, bbq sauce, maybe an onion, garlic chili, worcester sauce, brown sugar etc. make it how you like.

I cooked chilli con carne recently, but this looks a lot better a version than mine! Will strongly consider giving this a go. :)

Chicken should be fine. Although those ingredients are basically a pulled-pork rub...

Indeed, the pulled pork thread was what got me the slow cooker, looked and tasted sooooooo awesome. :D Just trying something different to try and impress the girlfriend at least a little.

BBQ baked beans? I'm intrigued. Tell me more! Do you mean just put all ingredients together in a bowl and microwave? :)
 
Not quite as easy as that. But you can use pretty much any bean you want and as you have kidney beans. Also caned beans don't realy need cooking. You can pretty much do nothing with the recipe you want.
I like using purely blacked eyed beans. But it's one of those recipes you don't have to even remotely stick to.

1 pound smoked bacon cut into 1/4 inch slivers
1 can (15 ounces) black beans
1 can (15 ounces) dark red kidney beans
3 cans (each 15 ounces) baked beans or pork and beans
1 large sweet onion, finely chopped
1 red bell pepper, cored, seeded, and finely chopped
1 poblano pepper or green bell pepper, seeded and finely chopped
4 cloves garlic, minced
3 to 6 jalapeno peppers, seeded and diced (for hotter beans, leave
the seeds in)
2 cups sweet red barbecue sauce (your favorite commercial brand)
1-1/2 cups firmly packed light brown sugar, or more to taste
1/2 cup Dijon mustard, or more to taste
2 teaspoons liquid smoke (optional; see Note)
Coarse salt (kosher or sea) and freshly ground black pepper


Other Items Needed:
1 large (turkey-size) or 2 medium-size aluminum foil pans; 2 cups wood
chips or chunks (preferably pecan or hickory) soaked for 1 hour in water to cover then drained

Directions:
Place the bacon in a large skillet over medium heat and fry until crisp and golden brown, about 5 minutes. Pour off all the bacon fat, saving a few tablespoons for the beans, if desired.

Empty the cans of black and kidney beans into a colander and drain. Rinse the beans under cold running water and drain again. Place all the beans (including the baked beans or pork and beans) in a large nonreactive mixing bowl and add the onion, bell and poblano peppers, garlic, and jalapenos and stir to mix. Add the barbecue sauce, brown sugar, mustard, liquid smoke, if using, and bacon and stir to mix. Taste for seasoning, adding more brown sugar and/or mustard as necessary, and salt and black pepper to taste. The beans should be very flavorful. Transfer the bean mixture to the aluminum foil pan or pans. (You can drizzle a few tablespoons of bacon fat over the beans for extra flavor.)

Set up the grill for indirect grilling and preheat to medium-low. If using a gas grill, place all of the wood chips or chunks in the smoker box or in a smoker pouch and run the grill on high until you see smoke, then reduce the heat to medium-low. If using a charcoal grill, preheat it to medium-low, then toss all of the wood chips or chunks on the coals.

When ready to cook, place the pan of beans in the center of the hot grate, away from the heat, and cover the grill. Cook the beans until they are thick and richly flavored, about 1 hour. If the beans start to dry out, cover them loosely with aluminum foil. Remove the beans from the grill and let them rest for 15 minutes, then serve.

Note: If you cook the beans on a gas grill, you probably wont be able to generate enough smoke for a strong wood flavor. Add the liquid smoke in this case.

Put in a plastic bag and seal it, leave for 5 mins.
Remove and scrape of the black skin, doesn't matter if a bits left.
Cut open remove seed and dice, save for latter.

Take a frying pan, dice an onion and fry until translucent.
Dice a rasher or two of bacon and add to the onion and fry for a minute.
Take a garlic clove and mash it, throw in pan and fry for a minute.
Drian your kidney beans if in salt water, if in chili sauce, throw the whole can in.
Add some bbq sauce and the diced pepper.
And bring to the boil, reduce to a sauce consistency.

That's a darn good base, from that you can add chilli, or any number of other flavours/spices.

Just saw the ribs thread, and they look ****ing awesome! Anyway of incorporating them into the whole affair or is my 3.5l cooker going to be too small? Nom nom nom!

That screams chilli to me mate. Buy mince and chuck steak/stewing steak and a can of pinto beans and a can of red kidney beans and you're away.

Create a rub that might be suitable for pulled pork - chilli, paprika, sugar, cumin vinegar - coat chicken thighs in it. Then a couple of hours of this being at low/medium heat (and having sweated lots of fat) you cut it up and add some BBQ sauce. Delicious, juicy and cheap.
 
FWIW, this is my Chili recipe:

500g Mince
1.5 Onions (finely diced)
4 large cloves of Garlic
1 tbsp Tomato Puree
1 can Chopped/Peeled Plum Tomatoes (blended)
500 ml Beef stock or 500 ml hot water and a rich beef stock pot ;)
3-6 Hot Green Chillies
2 tsps Chilli Powder
1 tsp Ground Cumin
1 Can of Mixed Beans
1 Cup a finely minced Chives

1. Brown mince properly, i.e. it should look like this not this. Then remove from pan.

2. Add a little oil as needed and soften onions, add crushed garlic and cook until golden, ensuring you scrape any little bits of mince from the bottom of the pan as you do.

3. Add the mince back to the pan, along with tomato puree and ground spices. Stir over the heat for a few minutes to ensure the tomato paste coats everything.

4. Add chopped tomatoes, green chillies and stock. Simmer gently until thick and most of the water has evaporated.

5. Remove from heat and add beans (including liquid). Season to taste (use salt and cider vinegar), and add plenty of freshly ground black pepper. Allow to cool and add minced chives.
