hwmonitor is a good one, gives you voltages, fan speeds etc aswell. Not sure about sandy bridge temps however im guessing theyre similar to the standard i7 so you wouldnt want more than 80deg load

I use real temp to monitor my temps. On sandybridge set ups, as sadi above, u'll want no more then 80c at load
