What to cook on a bbq with chipotle paste?

I'm struggling for ideas here. I'm off to a bbq on Sunday and have some lovely homemade chipotle paste I made a while ago. First thought would be to mix with honey and do some ribs, but think to do them well they need to be precooked really, and I won't have any time for that. Maybe chicken wings?
 
Get a load of chicken thigh fillets and marinade them for 24 hours in chipotle paste + honey + lemon juice. Cook them as indirectly as possible on the BBQ (so you can render the fat as best as possible) then sear on each side over the hot part.
 
Chicken thigh fillets sound good actually. I love chicken wings but I think I'm in the minority there :p There's not a vast amount of meat on them I suppose. Ooh and lemon.. check! :D

Went for boneless thighs in the end. Was a bit nervous about bone in ones, and thought people would get a bit bored waiting :p They were lush though, had a real kick to them but ever so smoky. I will definitely be making another batch in preparation for the next bbq. Gorgeous with a bit of mayo in a roll. Like a pumped up chicken burger. Yum :cool:

My mate made wine marinaded sliders, my other mate bought some awesome Chinese ribs and sausages from his local farm shop.

No pics because we were too busy eating, sorry :p

Awesome, glad to hear they turned out well :) Chicken thigh fillets are an awesome combination of great taste and laziness in terms of prep. I love them :p
