What to do here?

I currently have the ASUS Z270 PRIME motherboard and am using the 1TB 980 ( not evo or pro ) as the sole SSD.
I also have two external backup drives : A 250gb Crucial MX500 and a 1TB 970 Evo.

I feel I have two many drives and want to get rid of one. Should I swap the 980 for the 970 Evo and then get rid of the MX500?
Mind you, my crucial backup data is only around 100GB.
 
Your motherboard has 2x M.2 slots, so you could just plug the 1TB 970 Evo into your motherboard and then hey presto, you got rid of one of the external drives.
I want to backup all my data to an external drive. I currently do it manually ( copy-paste ) once every month.
