What to do with a load of Rhubarb

In our back garden we have a few rhubarb plants, 4-5 I think. due to the recent weather we have absolutely loads of rhubarb, too much really, which is ready to be cut.

Anyone got any ideas what I can make with all this rhubarb?
 
I think we have enough to make about 10 massive crumbles and not too amny of us eat them, I will make a one or two.

Ok, ship the other 8 down here, wouldn't last very long in this household :)
 
Mate go for the crumble...

Ive been eating lots of blackberries from the garden all crumbled up, so nice with tesco value custard :D
 
I love a good tart ;)

My favourite edible tart is Rhubarb and Lemon Curd....mmm... home-made lemon curd as well, you can make it as a lattice tart or open-topped, but the rhubarb and lemon go very well together.

Rhubarb and lemon, sounds interesting, I think ill pop to tesco later and get a few lemons. How easy is it to make lemon curd?

Thats what my dad said, he used to go round with his brother and a bowl of suagr stealing peopels rhubarb, I tried it onces its a bit minging.
 
Lemon curd is pretty easy....offhand....lemon rind and juice, cornflour, eggs and egg yolk..hmm, some water at a guess. It looks like a really watery mess, but kinda comes together like scrambled egg when it heats up, and then turn very quickly into lemon curd as you know it. Shop bought lemon curd is very yellow, whereas home-made is a more natural colour, almost translucent dependind on how many egg yolks you put in it (which colour it yellow) and thats better so that you can see the rhubarb through it.
 
You could always give some to neighbours/friends .......... radical, I know but someone has to start these things. ;)

Already have done:) Proble is we grow so much, we get about 4 crops during the summer/autumn people get sick of it!!
