VMWare Server ESXi is also free now, which requires no Host OS to install on top of.
Mate one up with an OPENFiler box to act as a iSCSI SAN and you get round the hardware issues of ESXi in terms of limited Hardware Support. Get an Intel Pro1000 NIC card to sort out the networking.
The only reason I would run VMWare Server now rather then ESXi is if looking to use the machine for just the odd virtual machine on a desktop rather then an out and out Server with VM's running.
OT I know but has anybody ever recovered from a boot failure on ESX 3.5? Recently rebooted out ESX server which failed to boot, eventually booted the system off the ESX install CD, prompted me to recover so selected it and then nadda, ESX comes up in limp mode so you can't do anything.
