what would be better

It depends on what your definition of "better" would be, personally I would go for the 6970 over two 5850's, it future proofs you and they could be quite power hungry.
 
2x 5850 will offer better performance within almost every game.

Howver the 5850's will require more power to run, you may need a meatier PSU, and they'll create more heat and noise, especially if they are installed immediately next to eachother.

I'd go for the 6970, or even better a 6950 if you can find a used one that will flash to 6970.
 
welcome. Another point, I see you have a 5850 already well you could quite easily get a good near 100 quid for that to put towards a brand new 6970 :).
 
I was in the same position, Already have a 5850 but needed a bit more grunt for BF3. Paid £85 inc del for a 5850 vanilla to CF.

It means that now I can save towards replacing the Q9450/Mobo/Ram whilst having GFX power equivalent to a NV 580.

Seems like a no brainer. Although if I had anything other than a 5850 to start with I would have got the best single card I could afford.
