What would I be able to build with a 600w PSU?

I'm currently still running an old Q6600 build which I've been steadily upgrading over the years since the initial build, one of which was upgrading the PSU to a Corsair 600w GS PSU.

It's getting on a bit now though, so if I were to build a new system but reuse the PSU (as well as 1xSSD, 3xHDD and 3x120mm and 1x 140mm fans), what kind of CPU and GPU would I be looking at before the PSU starts becoming a limiting factor? I might dabble with a bit of overclocking, but I've never been very successful in the past, so assume I'll be running stock, and I'll be looking at 16-32GB RAM for photo editing.
 
Oh whoops, the budget would be around £500. The only things I would need are a mobo, RAM, CPU and GPU.

It would be for image editing (RAW image files and such) and a bit of gaming. I've been gaming less and less these days, so I don't need it to run BF4 at 120fps, but it'd be nice to have respectable framerates (50-60fps) on medium/high settings on modern games. I suppose in this respect, the CPU and RAM choice would be more important than the GPU.

You could get a R9 270 at ~£115.
Then again you could add a tenner and get the faster 2400MHz ram.

Bad time to be buying in my opinion - these CPUs are at the highest price I've seen them !
