what would you choose 3x 140mm fans or 2x200mm ?

Same as usual I guess.

If after silence, and the 200mm fans can be ran low enough (enough airflow performance). They will be taken as the choice.
If after performance (just air being blown at full speeds), then reading a rough guide on the fans (I just took a quick gander at Noctua as they have 140mm and 200mm fans) and it looks like the 140mm will provide more airflow in total. So the 140mm will be the choice if after that.

If after a combination of performance and silence, then it really depends on how high your tolerance to noise produced is. Typically the larger fans will run slower rpms at max performance and in theory should provide less noise. But this really does depend on your case you house them as well. Since some more flimsy panels will echo and vibrate from the airflow and cause annoyance for those who can hear it. Badly structured internals will also yield aggrevating sounds if you increase airflow through/onto them. So I would really take this as a matter of goals you have; Both fan ideas appear just as valid as the other, but would depend entirely on your personal goal for them.

Silence (what your ears can/will tolerate), or Airflow at full (when you need to cool the system no matter what).

In a pinch, your PSU may also be a determining factor, as it might not have enough power to run everything (as I recently found out to my dismay after adding more fans to my rig and the PSU wasn't having it when I heavy loaded the system). In which case the 200mm fan may be more desired for the lower power requirement.

I have 3 intake fans, 2 exhaust fans ontop of cpu fan, and a 5700 XT, my PSU seems absolutely fine
overclocked too

think ill go for 2 x 200mm ones then

Currently got 3 Arctic 120mm , and they make an odd noise which i hate, the noctuas on the back are silent and another noctua on the CPU , thats also silent
 
Looks good. From personal preference and testing (with an actually functioning fan controller unlike the ones on my motherboard - Asus R4E! :mad::mad::mad:), the A20 threshold of (you shouldn't be able to hear this if the case is around 60cm away - around the distance from ears to system under a desk for example) is around 40% PWM (give or take your own hearing). Although I effectively have a "shroud" on my case in front of it to help divert noise that might come from it away (since apetures of the fans let noise in/out too), so that helps. But 40% or there-abouts should fit you fine, and with two of them, should provide enough airflow coming in whilst keeping it low enough in noise production.

Not sure if there are other 200mm fans available that others might want to recommend as options, but I would give the thumbs up on the Noctua A20.
 
The idea of pressure optimised/high static pressure fans is that they are more suitable for pushing "through" something, like a HSF or radiator. Don't worry about it for a case fan.

Not true.
Case grills and filters are way more restrictive than HSF and are equal to or more restirctive than radiators. SilverstonTek did a good report about grill and filter resistance.
