Both running at stock, but i've changed over to i7 and it seems a lot slower than my previous rig.

Previous rig:

AMD Phenom II X4 965 (3.4GHz)
8gb G.Skill F28500 DDR2 Memory
ATI Radeon HD 5750 graphics
Asrock A790GMH/128M motherboard

New rig:

Intel Core i7 950 (3.06GHz)
3GB Kingston 1600Mhz DDR3 Memory
ATI Radeon HD 5750 graphics
Foxconn Flaming Blade 1366 motherboard

Just the i7 seems quite a tad bit slower, is it due to the memory decrease? I thought even though it was less in capacity, the jump from DDR2 to DDR3 would have made up for it.

Anyone as im debating to sell the 950 and get a 920 instead and use it as a test rig and use the AMD system as my main rig.

Thought going from ddr2 to ddr3 would make a bit of difference.

I do video rendering, so should i go for 6gb or 12gb?

The ram is the problem, get 6GB and it will run a lot better for what you do. 12GB in my opinion is just not worth it as it doesn't get fully utilised at the moment. Also it will just limit your overclock. By the way make sure your os is 64bit to make full use of your ram. If you haven't already got a 64bit os i can't recommend windows 7 x64 enough.
