whats average overclock for 8800 gtx?

You can do to start. Some shaders will go higher than the highest linked core speed but I would move them together to begin with and then try tweaking the shader a little further. It might not go any higher.
Not an easy answer. Every card is different and only you will know. Just take it 10Mhz at a time, run something like ATI tools 3d stress for 10 minutes, repeat 10Mhz increase until you get errors.
Back down to last stable setting (or try just 5Mhz back), test for full stability by looping 3dmark06, run some very high graphical stressful games (World in Conflict seems to stress peoples overclocks which had been stable till then but falls over in that game)
Some people get to Ultra speeds, some people further. I know with the 8800 GTS which I have people get from 621 to 700 on the core so that is one hell of a range.
