Whats the average overclock on air (4800 X2)?

Yes...I would say AT LEAST 2.6ghz...but you should be able to get all the way up to 3ghz. No guarantees though. :) Googling various steppings to find out the results of others is a good way to see.
 
I had my old x4800 @2.9ghz on air,could have done more if i played with it,one thing i will say is the stepping needs to one of the good one`s,most shops will tell you what steppings they have before they sell it.

How do I found out which is a good stepping to ask for then mate?

the 4800 ccbwe's seem to be the most available at the moment and they stop at 2.6 to 2.7.

look out for 4400+ ccbie's as they clock to 3Ghz on good air.(see google)

OcUK's say ADA but i got an ADV.

General consensus is 2.6GHz to 3.0GHz for 4800's iirc.
