SpeedFan shows CPU and Core temps which I think both relate to the processor but they are measured in a different way. I've noticed that the Core temp responds much faster to changes in CPU activity and sometimes is even 5C lower than the CPU temp. Which one is more reliable indicator of the true processor temperature?

I think the Core temp is taken directly from the cores. The CPU temp on the other hand is taken from a sensor underneith the CPU on the motherboard. I could be wrong though. 
So the Core temp is the best way tell the temperatures.
