Whats wrong with my pc.

Currently I'm running a Ryzen 7 3900X and a GTX 1660 Super yet I can barely run above 60fps on Minecraft.
FPS predicting sites say I should get 500+
Any suggestions?

guessing you've got a 120hz+ monitor ? as if 60hz monitor... no point in going over 60fps

Have you checked in the NVIDIA Control Panel, underneath Change Resolution that the refresh rate is correct? Also, there is another setting underl 3D settings that can limit your refresh rate. Ensure that is set to 142Hz ( this sets the maximum refresh rate of the card and NVIDIA recommend it is set to two below your max refresh of your monitor ). Check also the Freesync and G-Sync configuration and especially what they are applied to (Fullscreen or Window and Fullscreen), if you have an adaptive sync monitor.

Nividia Control Panel also has a setting
Max Frame Rate make you na disable it or set it to max capped fps, I've had it sometimes set itself to 1 fps so worth having a look

yeah no i've managed to get over like 300fps before and i woke up and haven't managed to reach over 60, it's definitely not capped tho because i have seen it go over for like a couple frames at a time.
