So far I'm considering

Asus P5N32-E SLi
Asus Striker Extreme
Asus P5B Premium Vista Edition

with
Intel Core 2 Duo E6850

OCZ 4GB (2 x 2GB) PC2-6400C5 Dual Channel Vista Gold Series DDR2
or 2 gig OCZ PC2-8500 SLI

do either have problems working on the above boards?

Given your inclusion of the P5B I gather that SLI isn't a necessity?
In that case I would suggest a P35 based mobo - abit, Asus & Gigabyte all sem to have excellent, stable models.

one of those 'nice to have, but not essential' options

changed track entirely after reading for hours, and went for this one
Asus P5K Deluxe WiFi Intel P35 (Socket 775) PCI-Express DDR2 Motherboard

and why do all the boards now only seem to have 1 ide connection?

I'd to order 2 new sata's even though i'd 2 perfectly good 250 ides already :(
