I would go with the second option with the bigger SSD.
As for the cooler i would go H50, as not that keen on massive coolers.

Appears that the OCZ Vertex 2E SSD has a little metal adaptor included to fit a 3.5" drive bay, so you can get the "lite" version of that case.
