Which card?

Both very good GPUs. You have £200, if you want/need some change then get the 560 or spend all of your budget on the 6950, there isnt a great deal of difference between the 2.

surely the 6950 with 2048MB GDDR5 and its Memory Clock of 5000MHz would be better than the 560 with 1024MB GDDR5 and its Memory Clock of 4000MHz?

In actual performance terms, there's not a lot of difference unless gaming above 1920x1080. However, I'd go for the 6950 simply because the 2GB vram may help in the future. It'll make almost on difference in today's titles though (unless you're playing at super high res).
 
2GB vram will help in the future if you want to play at high settings but I still think 1GB will be enough for years to come.

I would go for the 560 Ti and get a better 2GB card when they come down in price as the 560 Ti is more or less exactly the same as the 6950.

You will have to upgrade in a few years anyway when the 6950 will be obsolete for newer games.
