Looking to upgrade my gpu.
Initially into my existing rig in my sig, but with an eye on the future.

Looking to get something along these lines
i7 2700k
z68 board
16gb Ram (cos it's cheap)
128Gb SSD
case and PSU if the mood or need takes me.

So.... what GPU
1x 580 3gb
or
2x 560ti 2gb

I know it's overkill for the current rig and will probably be limited by the rest of the system, but need to do a bit by bit upgrade.

Mostly for
MW3
BF3
some FSX
some adobe premier pro & PS

Budget around the £400 - £450 mark

Right... I see this one hasn't been commented on, so I will give you my advice.

GTX580 is the most powerful single cored GPU in the world and the MSI Lightning Edition is just EPIC and highly overclockable, but GTX560Ti in Sli is more powerful but there are pros and cons to each!

Pros of SLI:

Two GTX560Ti's faster than one GTX580
Better performance
Will last longer than one card alone

Cons of SLI:

More heat thanks to two GPU's (Good case needed and at least ONE side fan to cool the cards better)
Big case needed
Powerful branded 80 plus PSU needed (at least 700W)
Micro stutters of SLI (normal)
Can be more expensive sometimes
Balancing the cards.

In my opinion, get one GTX580 now, overclock it, and get another next year when the price drops when the ATI 7 series and the GTX600 series comes out. Then you will have two GPU's that will last you a good few years.

I personally have 560 Ti in SLI and I get fantastic results, no problems in any game, and yes they are more powerful than a single 580.

Heat isn't an issue with me, I have the Twin Frozr II editions which are a lot cooler due to MSI's nice heatpipe and cooler, max load is about 70c on my main card, the second one never goes above 60c, my case helps though.

But yea a 580 now then another later would be good, or go for the 2 560's, they should be good for at least a year or so... I personally went two 560's because I got the first one dirt cheap.

Oh P.S microstuttering isn't that much of an issue as it used to be, I don't notice it personally.

Indeed. Drivers are better than they used to be for multiple GPU set ups. I remember 8800gt Sli, terrible micro-stutters lol
