Just a quick query. We had Lightspeed Fibre installed yesterday and it's working fine but I need to move the router to another room to hook up with my existing network. This will involve taking a cable from the ONT through an external wall so I know I'll need external grade cable. Total cable length will be 20m max. Am I right in thinking that cat5e should be sufficient for this or should I go for cat6?

5e will be fine. You’ll get 1Gb or 2.5Gb out of a 20m run with no problem at all so you still have headroom. Chances are 10Gb would be fine over that distance of 5e too, but if the cost is similar then you may as well just go with cat6.
