These in Crossfire:

Ready to order next month, so which would you go for, or wait for something even better on the horizon???

In general the 4870 is commonly faster than the 3870X2...so going for crossfire 4870 is going to dance all over the 3870X2...although you might want to hold off as there is a 4870X2 coming imminently.
 
Looks like the Crossfire option is best then?
Thinking of the DFI LANPARTY LT X38-T2R Intel X38 motherboard, PSU at the moment is a Corsair HX 520W, would that be enough to run the 4870 X2 in Crossfire?
