Which cut of Beef for a Christmas Dinner?

Having a Christmas dinner with mostly some Polish friends of mine. Having traditional Polish soup for starters (borsch) which is Beetroot soup with pierogi (Mushroom dumplings)

There will be a couple of traditional Polish desserts but for the main meal we tend to have a meat that isn't Turkey. From what I understand the Polish actually have something like 11 or 12 vegetarian dishes including a fish course which is typically Carp I believe. Due to my allergic reaction to fish it seems no-one minds changing from this

So back to my original question, recommendations for Beef that is good to roast for Christmas dinner or any other suggestions?

2 ribs would be enough IMO. 3 would be better

We had beef rib cut a few years ago. Absolutely outstanding! We made broth from the bones the next day too.

yes completely destroyed that sentence, meant to read they have mostly vegetarian only dishes on xmas eve plus a fish course :]
