Which graphics card?

Hey all.

I'm jumping to gaming on the PC and I need to decide which graphics card to get when I next get paid; it's the only part I'm missing - my PC is already built.

Current system specification is:

2500K @ 4.7
P8Z68-V PRO
4GB RAM
850W

Currently, I only have a single monitor at 1920x1080.

Now, here's where I can't make my mind up. My GPU budget will be around £500, give or take a little. I won't be able to upgrade this GPU for a long time (university - not likely to be able to have money left over for parts or additional monitors either so I want to pretty much go all out now). I'm looking to max everything I throw at it for some time to come - BF3 and Skyrim (I know that reqs aren't released) in all their glory would be great; completely maxed at a great framerate.

So, what do I do? The general consensus is that it is pointless to SLI/CF on a single display; overkill, more trouble than it's worth etc. Yet, I don't think a single 570 will likely last as long as I want it to.

A 580 is said to be terrible priceerformance ratio. The 580 I looked at the was the Lightning Extreme Edition, but that comes into the 6990/590 price range.

6990/590 would begin to just stretch my budget and for the price you can SLI 570s, CF 6970s - but that brings me back to SLI/CF on a single display.

If anyone has some suggestions, I'd really appreciate them.

I'm at a lost as to what to do. :(
