Which is better?

What games will you be playing here and at what detail levels/resolutions? Unless you are going to be playing at very high resolutions then I'd stick with a single card as it is less hassle and will still cope fine with most games, not to mention will be cheaper as well.
 
The crossfire X1800XT 512MB would be better than a single X1900XTX, but as said above only noticeable if you game at very high res with AA /AF on.
 
id go with the single 1900xtx, mine plays anything at 1280 x 1024 all details maxed easy

also with the xfire system, you would need a beefy psu so thats more money, also cooling will suffer slightly
