Which is better?

I've always bought 2 sticks of ram in a matched pair of the highest size I could afford. So I've only ever had 2 sticks in any rig I've built. But I am wondering which is better? 2 sticks or 4 but half the capacity?
Next build will be my first for 10 years. going from an i7-4770K to i5-12000K when the price of Z690 mobo's come down.
Need to buy everything new, including new case. So watching this space daily in the hope stuff comes down in price. But I did wonder if 4 x 8GB RAM would be better or worse than 2 x 16GB?
Is it?
 
Quad rank will make a very small difference. People weigh that up against whether 4 sticks makes it harder to overclock. Most don't overclock. There is extra power usage. Some people like the look of 4 filled slots.

Edit: I'm guessing quad rank maybe not a thing with ddr5.

My understanding is if you're gaming at 1080p with a powerful gfx card (say 3 series nvidia) and perhaps an older cpu then you'll see a tiny <5% increase in fps but if you're playing at 1440p+ on high settings you aren't going to notice anything.

It would surely be better to buy the fastest memory you can afford with the lowest timings regardless of it being dual or quad.

I'm sure someone more knowledgeable will answer this better.
