which linux server?

Do you intend to replace Exchange/Outlook with a completely new system or do you need to new server to fit into your existing infrastructure?
As far as distros go you can't go wrong with Debian or CentOS but I'm afraid that you might not be able to duplicate ALL your current functionality if you want to continue using the MS products at the client end.
Remember that Linux admins love the CLI and as such you'll probably end up using it at least as much as any slick GUI you install.
