Which movie is this?

Think it's a 90's film, there's one scene where a young boy is ill in hospital, his brother and mum visit him, and the older brother does this..

"hey look, I'm an Eskimo taking a pee" as he pours ice cubes on the floor.

I thought it was Outbreak, but watched this the other day and it's not that film.

I think another scene in the film has a guy trying to gas himself with his car fumes..

Pretty sure it has both those scenes (hospital and car fumes), not sure about the eskimo bit.

Yup, definitely The Client (Susan Sarandon and Tommy Lee Jones) - opening section has the guy gassing himself in the car, and the ice-cube bit is the older kid trying to get a response from his catatonic younger brother in the hospital.
