Which nuc for plex?

So I have been back and forward with various options for running plex server. Between running it on a nas or running rasplex on a raspberry pi, I've come to the conclusion my best option is to run it on a nuc. This is because I don't want my pc running all the time. So what is the best option for a low noise, lower power nuc for this?

Hi, yeah I want to stream iptv with it, I'll have some local media on the device too. So from what I'm reading I'll need it to be able to do transcoding. Forgot to say that my client will be on a roku 3 box.
 
Ok thanks I'll take a good look later. Just one more thing for now, am I right in thinking that transcoding is reliant on processing power? So if the nuc is just running windows 7 and the plex server software I'd be ok with just 4gb ram, or even get away with 2gb??
